Chicken and potato casserole

Here's a hearty and flavorful Chicken and Potato Casserole recipe:

Ingredients:

  • 4 boneless, skinless chicken breasts, cubed
  • 6 medium potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 cup heavy cream or milk
  • 1/2 cup chicken broth
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp butter, for greasing the baking dish
  • Fresh parsley or green onions for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a large casserole dish with butter.

  2. Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook until browned on all sides, about 5-7 minutes. Season with salt, pepper, paprika, thyme, and oregano. Remove from heat and set aside.

  3. Prepare the potatoes: In the same pan, add a little more olive oil if needed, and sauté the chopped onion and garlic until soft and fragrant, about 3-4 minutes. Add the cubed potatoes and cook for another 5 minutes, just until they start to soften. Season with salt and pepper.

  4. Assemble the casserole:

    • Spread half of the cooked potatoes in the greased baking dish.
    • Layer the browned chicken pieces over the potatoes.
    • Add the remaining potatoes on top, spreading them evenly.
  5. Mix the cream and broth: In a small bowl, whisk together the heavy cream (or milk) and chicken broth. Pour this mixture evenly over the casserole.

  6. Top with cheese: Sprinkle shredded cheddar cheese on top.

  7. Bake: Cover the dish with foil and bake for 35-40 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the potatoes are tender when pierced with a fork.

  8. Garnish and serve: Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley or green onions if desired.

Serve:

This Chicken and Potato Casserole is a comforting meal that pairs well with a simple green salad or roasted vegetables.
